DCL Recipes: Bacon Ranch Potato Salad Amy Poore

If you’re planning on enjoying some backyard summer parties, I’ve got the potato salad for you. This bacon ranch potato salad is a huge crowd pleaser, and it’s quick and easy to make. Summer is *far* from over so enjoy all the gatherings in coming weeks.

Bacon Ranch Potato Salad 
 

  • 5 lbs. unpeeled red potatoes 
  • 1 package (1 oz.) dry ranch dressing mix 
  • 2 cups mayonnaise 
  • 1 cup green onion, chopped 
  • 1 lb. bacon, fried and crumbled 

 

Boil potatoes for 15-20 minutes, rinse with cold water to cool. Chop into 1-inch pieces, place in bowl and refrigerate for at least 1 hour.


In a separate bowl, mix mayonnaise, ranch dressing mix and green onion. Cover and chill for at least 1 hour. 
 
Mix potatoes, mayonnaise mixture and crumbled bacon. Chill for at least another 20 mins. Serve chilled.
