Bacon Ranch Potato Salad
- 5 lbs. unpeeled red potatoes
- 1 package (1 oz.) dry ranch dressing mix
- 2 cups mayonnaise
- 1 cup green onion, chopped
- 1 lb. bacon, fried and crumbled
Boil potatoes for 15-20 minutes, rinse with cold water to cool. Chop into 1-inch pieces, place in bowl and refrigerate for at least 1 hour.
In a separate bowl, mix mayonnaise, ranch dressing mix and green onion. Cover and chill for at least 1 hour.
Mix potatoes, mayonnaise mixture and crumbled bacon. Chill for at least another 20 mins. Serve chilled.
